Isojiman Brewery Sake tasting

There are many ways to make sake, however a balance of fragrance and taste requires experience, attention, a huge amount of teamwork and a supply of the best ingredients...
 
Isojiman Brewery is located in Yaizu, from whence the Suruga Bay, Izu Peninsula, and Mount Fuji can be seen to the east, and the southern tip of the Japanese Alps can be seen in the far northwest.

This is a cryptic land where, according to the legend, Prince Yamato-Takeru cut down the surrounding grass with his legendary sword “Ameno-murakumo”, set the grass on fire to counter enemy fire attack that was enclosing him, and escaped from the trap…

Isojiman brewery's motto is 'washing is the beginning and washing is the end'; approximately 300 to 400 litres of filtered water is used to wash 10kg of sake rice. 'Washing is the end' means thoroughly washing sake sacks used to press the moromi, which is carefully cultivated for 45 to 50 days, making them as clean as possible.

Next Wednesday, we welcome Isojiman Brewery to 67 Pall Mall for a walk-around tasting to showcase the best of their brews; we hope to welcome you for a taste...
